Low Carb Eggplant chicken Chili

2 cups chicken
2  diced green onion,
1/2 Tbsp chili powder
1/2 TBsp paprika
1/2 Tbsp ground cumin
1 Tbsp oregano
1 tsp salt
1 tsp black pepper
2 cups eggplant diced
1 can (14.5 oz) of diced tomatoes
1.5 cups chicken broth (reduced sodium)
2 garlic cloves, minced or goya seasoning (no carbs in it)
Brown the green onion and egg plant  over medium-high heat in a large skillet until tender., add the cooked chicken  and  Add all of the spices and stir to combine.  Pour the diced tomatoes,, chicken broth, set on LOW.  cook 20 minutes and serve with cheese /avocado and sour cream and enjoy
