“Cornbread” Muffins:

“Cornbread” Muffins:
1 cup almond flour
2 large eggs
1 tsp baking powder
1/4 cup sour cream
2 Tbsp butter, melted
1 tsp sugar substitute
1 tsp garlic (or onion) powder

  1. I just had to say that I take some baby corn and put it in the processor and add it to a recipe quite like this one.. and it REALLY tastes like cornbread without adding a huge amount of carbs to it. 1/2 cup of baby corn has four carbs and two grams fiber.
